Vegan Chocolate Peanut Butter Banana Loaf

So, I accidentally bought too many bananas as usual. So, of course I made some banana bread. I wanted to make a slightly different one. So I put together my favourite things: chocolate and peanut butter!

INGREDIENTS
  • 1 cup self raising flour
  • ½ cup cocoa
  • ⅓ cup peanut butter, slightly melted
  • ¾ cups sugar or stevia
  • ½ teaspoon salt
  • 3 mashed bananas
  • ½ cup water
  • 2 tablespoons coconut oil
  • 1 teaspoon cinnamon
  • banana slices (optional)
  • Chocolate chips (dairy or non dairy)
  1. Preheat oven to 180. Line a large loaf pan with parchment paper. Set aside.
  2. In a large bowl, mix together the slightly melted peanut butter, sugar, mashed bananas, oil, and eggs. After mixing, stir in cocoa, salt, chocolate chips and vanilla. Stir in flour last.
  3. Pour into loaf pan and top with thinly sliced banana pieces. I used 1 banana for this part. Bake for roughly 55 minutes, until a knife inserted in the center of the loaf comes out clean. Cool on a wire rack for 20 minutes.
  4. Serve!

Vegan Golden Milk

In my quest to find nice recipes using anti-inflammatory ingredients to combat my rosacea and soothe my tummy, I have come across this lovely bed time treat. It uses turmeric, which has many health benefits.

‘According to the website for the U.S. National Library of Medicine, turmeric is most commonly used to treat cancer, as a blood thinner, for upset stomach relief, gall stone prevention, to lower high cholesterol, as an inflammation remedy, for liver protection, therapy for irritable bowel syndrome, to treat rheumatoid arthritis and osteoarthritis, as stomach ulcer therapy, viral infection remedy, treatment for inflammation of the eye and scabies. The National Center for Complementary & Alternative Medicine website adds that turmeric is also applied directly to the skin to treat skin conditions. This would be the way to use turmeric to treat rosacea.’ Read more here

I don’t/can’t use dairy or soya milk, so my favourite is almond. I really like Almond Breeze Reduced Sugar, because it’s quite subtle but still a good creamy taste. You can use whichever milk is your favourite.

For this Golden Milk I use:

Cup of Almond Breeze Reduced Sugar

Tea Spoon of Turmeric

Cinnamon Stick or a Tea Spoon of Ground Cinnamon

A Dash of Vanilla Extract

I also like to add a vanilla pod to the pan.

You can also add coconut oil if you wish.

I was very excited when this product arrived. I had heard a lot about Moringa Oil and its many benefits.

Moringa oil is reputed to be the best anti-ageing oil in the world, along with that it is also, antibacterial, antioxidant, anti-inflammatory and very moisturising for skin and hair.

It is high in vitamin C and anti inflammatory, so is wonderful for people who have rosacea like me! You can consume the oil if you wish to get the full benefits of the vitamin C. It can also help control blood pressure and supply you with energy throughout the day.

I really recommend this oil, especially for its anti-ageing properties. It is the best result I’ve ever seen from any cream my mum has used.

Purepotions Skin Salvation*

I decided to try something new on my skin this week. I’ve had dermatitis on my hands since I was a child and nothing has ever worked at getting rid of it, so I wanted to work on that.

Rosacea Supplements

I’ve been trying different combinations of supplements to see the effects they have on my rosacea and general health and I think I’ve finally found my favourites. Do check with your doctor first if you are worried about the suitability of these supplements.

Vitamin D

Since taking high dose vitamin D spray, I have REALLY noticed a difference. I used to get bugs and colds almost everything month. It has now been a year without having a cold. I am absolutely amazed, as I’ve never known life like this. I currently have my first cold in year, but it is nowhere near as bad as I used to get it. I would be in bed for a week in severe pain. Now I’ve just got a bit of a snuffle and headache. It’s crazy. I fully believe it is the DLux Spray I’ve been using. I go out for regular walks in the sun and take vitamins, but this spray absorbs faster into your bloodstream and gives you a higher dose.

Quercetin

For some people, the reason they flush is because of allergies and their Mast Cells reacting excessively to things. I have a lot of allergies and hypermobilty syndrome, so I think I may be experiencing this in a mild way. I have been prescribed strong antihistamines, but they make me drowsy, so I really wanted to find an alternative. There are many natural antihistamines and one which is very effective for rosacea sufferers is Quercetin. Quercetin is a naturally occurring bioflavonoid which can be found in apples and onions. I find taking a very small amount really helps stop flushing. I can’t tolerate a lot, as it brings on my vertigo.

Spirulina and Chlorella

Spirulina is good for a lot of reasons. It is a good source of iron, rich in protein, supports the immune system and is one of the best sources of iodine. It is also a natural antihistamine, so can be a good alternative to quercetin. Chlorella can boost the friendly bacteria in the gut which can be connected to rosacea.

 

These supplements definitely help me to feel and look good, but do check with your doctor of pharmacist before taking anything new.
